Chimichurri Sauce

Makes about 1 ½ cups sauce


1 cup chopped, fresh flat leaf parsley

¼ cup chopped shallot or white onion

¼ cup olive oil

3 tablespoons red wine vinegar

1-2 tablespoons water

1 tablespoon lemon juice

1 tablespoon chopped fresh oregano

3 cloves of garlic, chopped

1 Serrano pepper, seeded and chopped

¼ teaspoon salt

Throw all ingredients together in a food processor or blender and let that fucker run until it looks kinda like a chunk pesto. If it’s getting a little stuck, add a tablespoon of water to get that shit going again. Drizzle over roasted veggies, as a dipping sauce for bread, or just drink it you fuckin monster.
